Ingredients

Scale

Carrots:

  • 1 pound carrots (peeled and sliced into sticks or rounds)

Glaze:

  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds (toasted)
  • Salt and black pepper to taste
  • Chopped fresh parsley or scallions for garnish (optional)

Instructions

  1. Heat the olive oil: In a large skillet over medium heat, heat the olive oil.
  2. Add the carrots: Add the carrots to the skillet and cook for 5 to 7 minutes, stirring occasionally until they begin to soften.
  3. Prepare the glaze: In a small bowl, whisk together the honey, soy sauce, rice vinegar, and sesame oil.
  4. Glaze the carrots: Pour the glaze over the carrots in the skillet and continue cooking for another 5 to 7 minutes or until the carrots are tender and glazed.
  5. Finish and garnish: Stir in the sesame seeds, season with salt and pepper, and garnish with parsley or scallions. Remove from heat and serve warm.

Notes

  • You can roast the carrots instead by tossing them in the glaze and baking at 400°F for 20 to 25 minutes.
  • For a spicy twist, add a pinch of red pepper flakes or a drizzle of sriracha.
