- 1/2 teaspoon salt
- 2 tablespoons melted butter
- 1/2 cup sour cream
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup shredded cheddar cheese
Assembly
- 10 small flour tortillas
- 1 can green enchilada sauce (10 ounces)
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup shredded cheddar cheese
- 2 tablespoons chopped fresh cilantro
Instructions
- Preheat and prepare dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish to prevent sticking.
- Mix the honey lime sauce and seasonings: In a large bowl, combine honey, fresh lime juice, chili powder, garlic powder, salt, and melted butter. Stir well to create a flavorful sauce.
- Coat the chicken: Add the cooked shredded chicken to the sauce mixture and toss until the chicken is evenly coated with the sauce.
- Add sour cream and cheeses: Stir in the sour cream along with half of the shredded Monterey Jack and cheddar cheeses into the chicken mixture to create a creamy filling.
- Assemble the enchiladas: Spoon an even amount of the chicken filling onto each tortilla, roll tightly, and place them seam side down in the prepared baking dish.
- Add sauce and cheese topping: Pour the green enchilada sauce evenly over the rolled tortillas, then sprinkle the remaining Monterey Jack and cheddar cheeses on top.
- Bake: Bake in the preheated oven for 20 to 25 minutes, or until the cheese is melted, bubbly, and slightly golden.
- Garnish and serve: Remove from the oven, sprinkle with chopped fresh cilantro for a burst of color and flavor, and serve hot.
Notes
- Using rotisserie chicken can save time and add extra flavor.
- For a spicier dish, add diced jalapeños or a pinch of cayenne pepper to the chicken filling.
- Pair the enchiladas with avocado slices, rice, or a fresh salad for a complete meal.
