Honey Lime Chicken Enchiladas combine tender shredded chicken with a sweet and tangy honey lime sauce, layered with melted cheeses and baked to perfection. This easy Mexican-American main course offers a delightful balance of flavors, perfect for a flavorful weeknight dinner.

Ingredients

Scale

Chicken Filling

  • 2 cups cooked shredded chicken
  • 1/3 cup honey
  • 1/4 cup fresh lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter
  • 1/2 cup sour cream
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese

Assembly

  • 10 small flour tortillas
  • 1 can green enchilada sauce (10 ounces)
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish to prevent sticking.
  2. Mix the honey lime sauce and seasonings: In a large bowl, combine honey, fresh lime juice, chili powder, garlic powder, salt, and melted butter. Stir well to create a flavorful sauce.
  3. Coat the chicken: Add the cooked shredded chicken to the sauce mixture and toss until the chicken is evenly coated with the sauce.
  4. Add sour cream and cheeses: Stir in the sour cream along with half of the shredded Monterey Jack and cheddar cheeses into the chicken mixture to create a creamy filling.
  5. Assemble the enchiladas: Spoon an even amount of the chicken filling onto each tortilla, roll tightly, and place them seam side down in the prepared baking dish.
  6. Add sauce and cheese topping: Pour the green enchilada sauce evenly over the rolled tortillas, then sprinkle the remaining Monterey Jack and cheddar cheeses on top.
  7. Bake: Bake in the preheated oven for 20 to 25 minutes, or until the cheese is melted, bubbly, and slightly golden.
  8. Garnish and serve: Remove from the oven, sprinkle with chopped fresh cilantro for a burst of color and flavor, and serve hot.

Notes

  • Using rotisserie chicken can save time and add extra flavor.
  • For a spicier dish, add diced jalapeños or a pinch of cayenne pepper to the chicken filling.
  • Pair the enchiladas with avocado slices, rice, or a fresh salad for a complete meal.
