Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the Honey Mustard Marinade: In a small bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, minced garlic, paprika, salt, and pepper.
  3. Cook the Chicken: Place the chicken breasts in a baking dish and pour the honey mustard mixture over them, turning to coat evenly. Roast the chicken for 20 minutes.
  4. Prepare the Asparagus: Toss the trimmed asparagus with olive oil, salt, and pepper.
  5. Finish the Dish: After 20 minutes, add the asparagus to the baking dish around the chicken. Sprinkle mozzarella and Parmesan cheeses over the chicken. Return to the oven and bake for another 10–15 minutes, or until the chicken reaches an internal temperature of 165°F and the cheese is melted and bubbly.
  6. Serve: Garnish with chopped parsley if desired and serve hot.
