Ingredients
Scale
Filling
- 2 cups fresh blueberries (or thawed frozen)
- 1/4 cup granulated sugar
- 1 tsp lemon juice
- 1/2 tsp cinnamon (optional)
Pastry and Finish
- 1 sheet puff pastry (thawed)
- 1 egg (for egg wash)
Instructions
- Preheat Air Fryer. Set your air fryer to 375°F (190°C) to prepare for cooking the hand pies.
- Prepare Blueberry Filling. In a bowl, mix together the blueberries, sugar, lemon juice, and cinnamon if using. Let the mixture sit briefly to blend the flavors.
- Cut Puff Pastry. On a floured surface, roll out the thawed puff pastry sheet and cut it into evenly sized squares, suitable for hand pies.
- Assemble Hand Pies. Place a spoonful of the blueberry filling into the center of each puff pastry square. Fold the square over to form a triangle or rectangle and press the edges firmly with a fork to seal properly.
- Apply Egg Wash. Beat the egg and brush it over each sealed hand pie to ensure a golden, shiny crust after cooking.
- Air Fry Pies. Arrange the hand pies in the air fryer basket without overcrowding to allow air circulation. Cook for 10-12 minutes or until the pies are puffed and golden brown.
- Cool and Serve. Remove from the air fryer and let the pies cool for a few minutes. Serve warm for the best flavor and texture.
Notes
- You can substitute frozen blueberries if fresh are not available; just thaw and drain excess liquid.
- Make sure the puff pastry is fully thawed before rolling out to avoid tears.
- Seal the edges well to prevent filling leakage while cooking.
- Egg wash can be replaced with milk or cream for a different finish.
- Serve with ice cream or whipped cream for an extra indulgent treat.
