  • 12 soft caramel candies
  • 1/4 teaspoon flaky sea salt
  • 1/2 cup heavy whipping cream
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon unsalted butter
  • Additional flaky sea salt for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. Beat butter and sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add eggs and vanilla: Add the eggs one at a time, then mix in the vanilla extract.
  5. Combine wet and dry: Mix in the dry ingredients alternately with the buttermilk until just combined. Stir in the hot water until smooth.
  6. Fill cupcake liners: Fill each liner halfway with batter, add a caramel candy and sea salt, then top with remaining batter.
  7. Bake: Bake for 18-20 minutes until set. Cool slightly.
  8. Make ganache: Heat cream, pour over chocolate chips, stir in butter until glossy.
  9. Top cupcakes: Spoon ganache over each cupcake, sprinkle with sea salt, and serve warm.
