- 2–3 jalapeños (seeded and diced)
- 4 cups chicken broth
- 3 cups cooked shredded chicken
- 1 package (8 oz) cream cheese (softened)
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
For Garnish:
- 4 slices cooked bacon (crumbled)
- Chopped green onions
- Extra cheese
Instructions
- Prepare the Soup: Heat olive oil in a large pot. Sauté onion until soft, then add garlic and jalapeños. Pour in chicken broth, add chicken, cream cheese, and heavy cream. Stir until cheese is melted. Mix in cheddar, paprika, salt, and pepper. Simmer for 10–15 minutes.
- Serve: Stir in bacon. Garnish with green onions, extra cheese, and more bacon if desired. Serve hot.
Notes
- For a spicier version, leave some jalapeño seeds or add cayenne pepper.
- Use rotisserie chicken for convenience.
- To thicken, add a flour or cornstarch slurry before simmering.
