Dough:

  • 2 cups shredded mozzarella cheese
  • 2 ounces cream cheese, softened
  • 1 1/2 cups almond flour
  • 2 tablespoons coconut flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted

Filling:

  • 1/3 cup granulated erythritol
  • 1 tablespoon ground cinnamon

Frosting:

  • 2 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1/3 cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons heavy cream

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and line an 8×8-inch baking dish with parchment paper.
  2. Melt cheeses: In a microwave-safe bowl, melt mozzarella cheese and cream cheese until smooth.
  3. Prepare dough: Combine almond flour, coconut flour, baking powder, and salt in a bowl. Mix in eggs and vanilla extract, then add to the cheese mixture and combine.
  4. Roll out dough: Roll dough into a rectangle, brush with melted butter, sprinkle with erythritol and cinnamon, then roll into a log and slice into rolls.
  5. Bake: Arrange rolls in baking dish and bake for 18–20 minutes until golden brown.
  6. Make frosting: Beat cream cheese and butter, add erythritol, vanilla, and cream until smooth. Spread over warm rolls.
