Dough:
- 2 cups shredded mozzarella cheese
- 2 ounces cream cheese, softened
- 1 1/2 cups almond flour
- 2 teaspoons baking powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 2 large eggs
Garlic Butter Topping:
- 2 tablespoons unsalted butter, melted
- 1 teaspoon dried parsley
- 1 garlic clove, minced
Instructions
- Preheat oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Melt cheese: In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave until fully melted and smooth, stirring at intervals.
- Mix dry ingredients: In a separate bowl, whisk almond flour, baking powder, garlic powder, and salt. Add eggs to the cheese mixture and stir.
- Form dough: Mix in the dry ingredients until a dough forms. Divide into 8 portions and shape into rolls.
- Bake: Place on baking sheet and bake for 15–18 minutes until golden brown.
- Prepare topping: Mix melted butter, parsley, and minced garlic. Brush over hot rolls when out of the oven.
Notes
- For added flavor, include 1 teaspoon of Italian seasoning in the dough.
