Description

These Keto Garlic Rolls are a delightful low-carb alternative to traditional bread rolls. Made with a cheesy, garlicky dough, they are perfect for complementing soups or pasta dishes while following a keto or gluten-free diet.

Dough:

  • 2 cups shredded mozzarella cheese
  • 2 ounces cream cheese, softened
  • 1 1/2 cups almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 large eggs

Garlic Butter Topping:

  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon dried parsley
  • 1 garlic clove, minced

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Melt cheese: In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave until fully melted and smooth, stirring at intervals.
  3. Mix dry ingredients: In a separate bowl, whisk almond flour, baking powder, garlic powder, and salt. Add eggs to the cheese mixture and stir.
  4. Form dough: Mix in the dry ingredients until a dough forms. Divide into 8 portions and shape into rolls.
  5. Bake: Place on baking sheet and bake for 15–18 minutes until golden brown.
  6. Prepare topping: Mix melted butter, parsley, and minced garlic. Brush over hot rolls when out of the oven.
