Main Cookie Dough:

  • 1 cup unsalted butter (softened)

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup butterscotch chips
  • 1/2 cup crushed pretzels
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup toffee bits
  • 1/2 cup sweetened shredded coconut
  • Flaky sea salt for topping (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla.
  3. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  4. Add mix-ins: Fold in the chocolate chips, butterscotch chips, pretzels, nuts, toffee bits, and coconut.
  5. Bake: Scoop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Sprinkle tops with flaky sea salt if using. Bake for 10–12 minutes, or until the edges are golden and the centers are just set.
  6. Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
