For the stew:

  • 2 lbs beef chuck or lamb, cut into large cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 (14 oz) can crushed tomatoes
  • 2 tbsp tomato paste
  • 1/2 cup dry red wine
  • 1 cup beef broth
  • 1 cinnamon stick
  • 1 bay leaf
  • 1/2 tsp ground allspice
  • 1/2 tsp sugar
  • Salt and pepper to taste

For garnish:

  • Chopped fresh parsley

Instructions

  1. Prepare the stew: In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Brown the beef in batches on all sides. Set aside. Sauté onion until soft, then add garlic. Stir in tomato paste and cook briefly. Deglaze with wine, then add crushed tomatoes, broth, spices, and seasonings. Return beef to pot and bring to a boil.
  2. Simmer: Reduce heat, cover, and simmer for 1.5 to 2 hours until meat is tender and sauce thickens. Remove bay leaf and cinnamon stick before serving. Garnish with parsley.
