Description

  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 1/4 cups fresh blueberries (tossed with 1 tablespoon flour)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat oven and prepare loaf pan: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix wet ingredients: In a large bowl, cream butter and sugar, then add eggs, lemon zest, lemon juice, and vanilla.
  3. Combine dry ingredients: In a separate bowl, whisk flour, baking powder, and salt.
  4. Combine wet and dry ingredients: Add dry ingredients to wet mixture alternately with milk, then fold in blueberries.
  5. Bake: Pour batter into the loaf pan and bake for 50–60 minutes until a toothpick comes out clean.
  6. Make glaze: Mix powdered sugar, lemon juice, and zest for the glaze. Drizzle over cooled loaf.

Notes

  • For extra lemon flavor, brush loaf with lemon syrup while warm.
  • If using frozen blueberries, do not thaw before adding to the batter.
