Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream together the butter and sugar until light and fluffy, about 3 minutes. Beat in the eggs one at a time, mixing well after each addition. Stir in the lemon zest and lemon juice.
  3. Combine dry and wet ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet ingredients in three additions, alternating with the milk, starting and ending with the flour. Stir in the vanilla extract.
  4. Bake: Pour the batter into the prepared pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack.
