Ingredients:

  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 6 cups low-sodium chicken broth
  • 1 cup cooked shredded chicken
  • ½ cup orzo or rice
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • juice of 1–2 lemons (to taste)
  • 2 tbsp chopped fresh dill or parsley (optional)
  • lemon slices for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until the vegetables are softened.
  2. Stir in the chicken broth, shredded chicken, orzo or rice, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10–15 minutes, or until the orzo or rice is tender.
  3. Stir in the fresh lemon juice and chopped herbs. Taste and adjust seasoning or lemon as desired.
  4. Serve hot, garnished with lemon slices and extra herbs if desired.

Notes

  • Use rotisserie chicken for a quick shortcut.
  • This soup can be made ahead and stored in the fridge for up to 4 days.
  • For a creamier texture, whisk in an egg yolk or a splash of cream before serving.
