Ingredients:
- 1 tbsp olive oil
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 6 cups low-sodium chicken broth
- 1 cup cooked shredded chicken
- ½ cup orzo or rice
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- juice of 1–2 lemons (to taste)
- 2 tbsp chopped fresh dill or parsley (optional)

Instructions
- In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until the vegetables are softened.
- Stir in the chicken broth, shredded chicken, orzo or rice, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10–15 minutes, or until the orzo or rice is tender.
- Stir in the fresh lemon juice and chopped herbs. Taste and adjust seasoning or lemon as desired.
- Serve hot, garnished with lemon slices and extra herbs if desired.
Notes
- Use rotisserie chicken for a quick shortcut.
- This soup can be made ahead and stored in the fridge for up to 4 days.
- For a creamier texture, whisk in an egg yolk or a splash of cream before serving.
