For the chicken:

  • 3 tablespoons unsalted butter
  • 4 garlic cloves (minced)
  • juice of 1 lemon
  • 1 tablespoon lemon zest
  • ¼ cup chicken broth

For the pasta:

  • 8 oz linguine
  • 2 tablespoons unsalted butter
  • ½ cup grated Parmesan cheese
  • ¼ cup pasta water (reserved)
  • 1 tablespoon lemon juice
  • salt and pepper to taste
  • chopped fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook linguine according to package directions until al dente. Reserve ¼ cup of pasta water before draining. Set pasta aside.
  2. Cook the chicken: Pat chicken dry and season both sides with salt, pepper, Italian seasoning, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear 5–6 minutes per side, or until golden brown and cooked through (internal temp 165°F). Transfer chicken to a plate and tent with foil. In the same skillet, lower the heat to medium. Add butter, minced garlic, lemon juice, lemon zest, and chicken broth. Simmer for 2–3 minutes, scraping up any browned bits. Return chicken to the skillet and spoon sauce over the top.
  3. Finish the pasta: In a separate pan or large bowl, toss the cooked linguine with butter, Parmesan, lemon juice, and a splash of reserved pasta water until creamy. Season with salt and pepper to taste.
  4. Assemble: Serve sliced chicken over a bed of Parmesan linguine. Spoon extra lemon garlic butter sauce from the skillet over the top. Garnish with fresh parsley and more Parmesan if desired.
