  • 4 chicken thighs (bone-in, skin-on)
  • 4 chicken drumsticks

  • juice and zest of 1 lemon
  • 1 tbsp lemon pepper seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Garnish:

  • chopped fresh parsley
  • lemon wedges for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the marinade: In a large bowl, mix together olive oil, lemon juice, lemon zest, lemon pepper seasoning, garlic powder, onion powder, salt, and black pepper.
  3. Marinate the chicken: Add the chicken thighs and drumsticks to the bowl and toss to coat evenly. Let marinate for 15–30 minutes if time allows.
  4. Cook the chicken: Place the chicken on a baking sheet lined with parchment paper or foil, skin-side up. Roast for 35–40 minutes until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  5. Optional step: Broil for an additional 2–3 minutes for extra crispiness if desired.
  6. Rest and garnish: Let the chicken rest for 5 minutes before serving. Garnish with chopped parsley and lemon wedges if using.
