For the shells:
- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites (room temperature)
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- zest of 1 lemon
- 1 teaspoon poppy seeds
- yellow gel food coloring (optional)
For the filling:
- 1/2 cup unsalted butter (softened)
- 1 1/2 cups powdered sugar
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the shells: Line baking sheets, sift almond flour and powdered sugar, beat egg whites, add sugar, flavorings, fold in dry ingredients, pipe onto sheets.
- Bake: Rest macarons, bake at 300°F for 14–16 minutes, cool.
- Make the filling: Beat butter, add sugar, lemon juice, zest, and vanilla, pipe onto shells, sandwich, and chill.

- Aging egg whites can improve results.
