Pasta:
- 12 oz rotini pasta
Beef Mixture:
- 1 lb ground beef
- 1 small onion (diced)
- 1 packet ranch seasoning mix (1 oz)
- 1 cup sweet corn (frozen or canned, drained)
- 1/2 cup sour cream
- 1/2 cup cream cheese (softened)
- 1/2 cup milk
- 2 cups shredded sharp cheddar cheese (divided)
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp paprika (optional)
- Chopped green onions or parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat oven to 375°F and grease a 9×13-inch baking dish.
- Cook Pasta: Cook rotini pasta until al dente, then drain and set aside.
- Prepare Beef Mixture: Brown ground beef and onion in a skillet. Add ranch seasoning, garlic powder, black pepper, and paprika. Mix in corn, sour cream, cream cheese, milk, and 1 1/2 cups cheddar until smooth. Add cooked pasta.
- Bake: Transfer mixture to baking dish, top with remaining cheddar, and bake for 15–20 minutes until bubbly.
- Serve: Garnish with green onions or parsley and serve warm.
