  • 1 packet ranch seasoning mix (1 oz)
  • 1 cup sweet corn (frozen or canned, drained)
  • 1/2 cup sour cream
  • 1/2 cup cream cheese (softened)
  • 1/2 cup milk
  • 2 cups shredded sharp cheddar cheese (divided)
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp paprika (optional)
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. Cook Pasta: Cook rotini pasta until al dente, then drain and set aside.
  3. Prepare Beef Mixture: Brown ground beef and onion in a skillet. Add ranch seasoning, garlic powder, black pepper, and paprika. Mix in corn, sour cream, cream cheese, milk, and 1 1/2 cups cheddar until smooth. Add cooked pasta.
  4. Bake: Transfer mixture to baking dish, top with remaining cheddar, and bake for 15–20 minutes until bubbly.
