Ingredients

  • 1/2 cup rolled oats
  • 1 scoop vanilla protein powder (about 30g)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • pinch of salt

Wet Ingredients:

  • 1/2 cup plain nonfat Greek yogurt
  • 2 large egg whites
  • 1/4 teaspoon vanilla extract

Additional:

  • nonstick spray or oil for the skillet
  • optional toppings: extra Greek yogurt, fresh fruit, sugar-free syrup, or chopped nuts

Instructions

  1. Prepare the Batter: Blend oats into flour, then add Greek yogurt, egg whites, protein powder, cinnamon, baking powder, vanilla, and salt. Blend until smooth and let sit to thicken.
  2. Cook the Pancakes: Heat a greased skillet, pour batter, cook until bubbles form, flip, and cook until golden brown. Repeat for remaining batter.
