For the cobbler:

- 1/2 cup fresh lemon juice

- 3/4 cup granulated sugar
- 1 cup hot water
Instructions
- Preheat the oven: to 350°F (175°C). Place the butter in a 9×9-inch or similar-size baking dish and put it in the oven to melt while the oven preheats.
- Mix the batter: In a medium bowl, whisk together the flour, 1 cup sugar, lemon zest, baking powder, and salt. Stir in the milk until just combined. Pour the batter over the melted butter in the baking dish.
- Add lemon mixture: Mix lemon juice with 3/4 cup sugar and pour over the batter. Do not stir.
- Pour hot water: Carefully pour hot water over everything. Do not mix.
- Bake: Bake for 40–45 minutes until golden and set.
- Cool and serve: Let cool for 10–15 minutes before serving.
