Ingredients
Scale
Mango and Fruit
- 2 ripe mangoes, peeled and diced
- 1 tablespoon lemon juice
- 1 cup mango puree (optional, for extra mango flavor)
- Fresh mango slices for garnish
- Mint leaves for garnish
Cheesecake Mixture
- 16 ounces (2 packages) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
Base Layer
- 1 package (10-12 ounces) ladyfinger cookies or sponge cake, cut into cubes
- Whipped cream for garnish
Instructions
- Prepare the Mango Cheesecake Layer: In a blender or food processor, puree one diced mango with lemon juice until smooth and set aside. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract and beat until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth. Fold in the mango puree until evenly distributed. Reserve some diced mango for garnish.
- Assemble the Trifle: In a trifle dish or individual serving glasses, layer the bottom with ladyfinger cookies or sponge cake cubes. Drizzle some mango puree over the cookies or cake to moisten slightly. Spoon a layer of the mango cheesecake mixture over the cookies or cake, spreading evenly. Repeat the layering process until the dish or glasses are filled, finishing with a layer of mango cheesecake mixture on top.
- Decorate and Chill: Garnish the top with fresh mango slices, reserved diced mango, whipped cream, and mint leaves for a fresh and vibrant look. Cover the trifle dish or glasses with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the trifle to set properly.
- Serve: Before serving, add additional mango slices, whipped cream, and mint leaves if desired. Enjoy this delightful mango cheesecake trifle with your friends and family!
Notes
- For enhanced mango flavor, use mango puree in layering and soaking the cake or cookies.
- Use fresh, ripe mangoes for the best flavor and texture.
- You can substitute ladyfinger cookies with sponge cake or pound cake if preferred.
- Chill time is essential for the trifle to set and for the flavors to meld well.
- Make sure the cream cheese is softened to avoid lumps in the cheesecake mixture.
