Salmon:

Creamy Sun-Dried Tomato Sauce:
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/3 cup sun-dried tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- Chopped fresh basil or parsley, for garnish
Instructions
- Season the Salmon: Season salmon fillets with salt and black pepper.
- Sear Salmon: Heat olive oil in a skillet over medium-high heat. Sear salmon for 3–4 minutes per side until golden and cooked through. Set aside.
- Make Sauce: In the same skillet, reduce heat to medium. Add butter and sauté garlic. Pour in chicken broth, simmer for 2–3 minutes. Stir in cream, sun-dried tomatoes, Parmesan, Italian seasoning, and red pepper flakes. Simmer for 3–4 minutes.
- Finish Dish: Return salmon to the pan, spoon sauce over fillets. Cook for 2–3 minutes. Garnish with basil or parsley. Serve hot.
