  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 small yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon tomato paste
  • 1/2 cup sun-dried tomatoes (drained and chopped)
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 1/2 cup heavy cream
  • 2 cups fresh spinach (chopped)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned and crumbled, about 6–7 minutes. Remove excess grease if necessary.
  2. Add the diced onion and cook for 3–4 minutes until softened. Stir in the garlic, Italian seasoning, crushed red pepper flakes, tomato paste, and sun-dried tomatoes. Cook for 2–3 minutes, stirring frequently.
  3. Pour in the chicken broth and bring to a boil. Stir in the orzo and reduce heat to a simmer. Cook for 10 minutes, stirring occasionally, until the orzo is tender.
  4. Lower the heat and stir in the heavy cream and chopped spinach. Simmer for 2–3 more minutes until the spinach is wilted.
  5. Stir in the Parmesan cheese and season with salt and pepper to taste. Serve hot, garnished with fresh basil if desired.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • This soup thickens as it sits, so add a splash of broth or water to leftovers when reheating.
