Description

This hearty Meat & Potato Casserole combines lean ground beef or venison with thinly sliced potatoes, a creamy mushroom soup sauce, and melted shredded cheese, layered and baked to perfection. It’s a comforting, easy-to-make dish that serves 6, perfect for family dinners or meal prepping.

Meat Mixture

  • 1 lb lean ground beef or venison
  • 1 onion, chopped
  • 1 tsp garlic powder (optional)
  • 1 tsp paprika (optional)
  • 1 tsp rosemary (optional)
  • Salt and pepper to taste

Potato Layer

  • 3 cups thinly sliced potatoes (about 5 potatoes)

Sauce

  • 1 1/2 cups cream of mushroom soup (1 can)
  • 1/2 cup stock (any kind)
  • 1/4 cup milk or cream
  • Salt and pepper to taste

Topping

  • 1 1/2 cups shredded cheese


Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) and grease an 11×7-inch glass baking dish to prepare for baking.
  2. Cook Meat: In a skillet over medium heat, cook the chopped onion and ground beef or venison until browned. Season with garlic powder, paprika, rosemary, salt, and pepper. Drain any excess grease from the pan.
  3. Prepare Sauce: In a bowl, whisk together the cream of mushroom soup, stock, milk or cream, and add salt and pepper to taste until smooth.
  4. Layer Ingredients: Place half of the sliced potatoes evenly in the greased baking dish. Pour a portion of the soup mixture over the potatoes. Add half of the cooked meat mixture on top, then sprinkle half of the shredded cheese. Repeat these layers with the remaining potatoes, sauce, meat, and cheese.
  5. Bake: Cover the casserole dish with greased aluminum foil (greased side facing down to prevent sticking). Bake in the preheated oven for 1 to 1.5 hours, or until the potatoes are fully tender.
  6. Serve: Remove from oven and let the casserole cool for a few minutes before serving to allow it to set and make serving easier.

  • You can substitute cream of mushroom soup with a gluten-free version to maintain gluten-free status.
  • Feel free to switch ground beef for venison or another lean ground meat for variation.
