This Meatball & Mashed Potato Bake combines savory meatballs with creamy mashed potatoes and gooey cheese for a comforting and satisfying meal that the whole family will love.

For Meatballs:
- 1 lb ground beef or turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic (minced)
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
For Mashed Potatoes:
- 2 cups prepared mashed potatoes
- 1/4 cup sour cream
- 1/4 cup milk
For Assembly:
- 1 cup shredded mozzarella or cheddar cheese
- 1/4 cup chopped parsley (optional)
- olive oil for drizzling
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Prepare the meatballs: In a large bowl, mix together the ground meat, breadcrumbs, Parmesan, egg, garlic, onion powder, oregano, salt, and pepper. Shape into 1-inch meatballs and bake for 15–18 minutes.
- Prepare the mashed potatoes: Mix the mashed potatoes with sour cream and milk until creamy. Spread in a baking dish.
- Assemble the dish: Arrange the cooked meatballs on top of the mashed potatoes. Sprinkle with cheese and drizzle with olive oil.
- Bake: Bake for 15–20 minutes until cheese is melted and bubbly. Garnish with parsley if desired.
Notes
- Use leftover or instant mashed potatoes for convenience.
- Add sautéed spinach or peas between layers for extra veggies.
