Description

This Meatball & Mashed Potato Bake combines savory meatballs with creamy mashed potatoes and gooey cheese for a comforting and satisfying meal that the whole family will love.

For Meatballs:

  • 1 lb ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic (minced)
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For Mashed Potatoes:

  • 2 cups prepared mashed potatoes
  • 1/4 cup sour cream
  • 1/4 cup milk

For Assembly:

  • 1 cup shredded mozzarella or cheddar cheese
  • 1/4 cup chopped parsley (optional)
  • olive oil for drizzling

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Prepare the meatballs: In a large bowl, mix together the ground meat, breadcrumbs, Parmesan, egg, garlic, onion powder, oregano, salt, and pepper. Shape into 1-inch meatballs and bake for 15–18 minutes.
  3. Prepare the mashed potatoes: Mix the mashed potatoes with sour cream and milk until creamy. Spread in a baking dish.
  4. Assemble the dish: Arrange the cooked meatballs on top of the mashed potatoes. Sprinkle with cheese and drizzle with olive oil.
  5. Bake: Bake for 15–20 minutes until cheese is melted and bubbly. Garnish with parsley if desired.
