  • 2 medium zucchinis (sliced into thin half-moons)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup Kalamata olives (halved)
  • 1/2 cup crumbled feta cheese
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

For Garnish:

  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Prepare the vegetables: In a large bowl, combine zucchini, cherry tomatoes, red onion, olives, oregano, garlic powder, salt, pepper, olive oil, and lemon juice. Toss to coat evenly.
  3. Add chicken and feta: Mix in the cooked chicken, then transfer the mixture to the baking dish. Sprinkle feta cheese on top.
  4. Bake: Bake uncovered for 25–30 minutes until vegetables are tender and the top is golden.
  5. Garnish and serve: Remove from oven, garnish with parsley, and serve.
