- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- ¼ teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- ¼ cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley or mint
- Juice of ½ lemon
Instructions
- Heat the olive oil: In a large skillet over medium-high heat, heat the olive oil.
- Cook the ground beef: Add the ground beef to the skillet and cook, breaking it up with a spatula, until browned and cooked through, about 6–8 minutes. Drain excess fat if needed.
- Sauté vegetables: Add the red onion and garlic to the pan and sauté for 2–3 minutes. Stir in bell pepper, zucchini, and cherry tomatoes. Cook for 5–7 minutes until vegetables are tender.
- Season and finish: Season with oregano, cumin, red pepper flakes, salt, and pepper. Cook for an additional minute. Remove from heat and stir in lemon juice, feta cheese, and herbs.
- Serve: Serve hot over rice, couscous, quinoa, or with warm pita bread.
