  • 1 pound ground beef (85–90% lean)
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • ¼ cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley or mint
  • Juice of ½ lemon

Instructions

  1. Heat the olive oil: In a large skillet over medium-high heat, heat the olive oil.
  2. Cook the ground beef: Add the ground beef to the skillet and cook, breaking it up with a spatula, until browned and cooked through, about 6–8 minutes. Drain excess fat if needed.
  3. Sauté vegetables: Add the red onion and garlic to the pan and sauté for 2–3 minutes. Stir in bell pepper, zucchini, and cherry tomatoes. Cook for 5–7 minutes until vegetables are tender.
  4. Season and finish: Season with oregano, cumin, red pepper flakes, salt, and pepper. Cook for an additional minute. Remove from heat and stir in lemon juice, feta cheese, and herbs.
  5. Serve: Serve hot over rice, couscous, quinoa, or with warm pita bread.
