Instructions
- Heat the skillet: Heat olive oil in a large skillet over medium heat to prepare for sautéing the vegetables and cooking the chicken.
- Sauté onion and garlic: Add the chopped onion and minced garlic to the skillet. Cook until they are softened and fragrant, about 3-4 minutes, stirring occasionally to avoid burning.
- Cook bell pepper and zucchini: Add the chopped bell pepper and diced zucchini to the skillet. Continue cooking for 5 minutes until the vegetables start to soften.
- Brown the ground chicken: Add the ground chicken to the skillet. Break it up with a spatula and cook until it is browned and no longer pink, about 6-8 minutes.
- Add tomatoes and spices: Stir in the halved cherry tomatoes, dried oregano, paprika, salt, and pepper. Mix well to combine all the ingredients evenly.
- Simmer: Cook the mixture for an additional 10 minutes, allowing the flavors to meld and ensuring the chicken is fully cooked through.
- Garnish and serve: Remove the skillet from heat. Sprinkle fresh parsley on top before serving to add a pop of color and fresh herbal flavor.
