Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the lasagna.
- Cook Noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
- Prepare Ricotta Mixture: In a mixing bowl, combine ricotta cheese, egg, Italian seasoning, salt, and pepper. Mix until smooth and well blended.
- Layer Sauce: Spread a layer of marinara sauce evenly on the bottom of a baking dish to prevent sticking and build flavor.
- Add Noodles: Place 4 lasagna noodles over the sauce layer, covering the bottom of the dish.
- Add Ricotta and Vegetables: Spread half of the ricotta cheese mixture over the noodles, then add half of the sliced and diced vegetables evenly on top.
- Sprinkle Cheese: Add a layer of shredded mozzarella cheese over the vegetables to enhance richness.
- Repeat Layers: Repeat the layering process with the remaining noodles, ricotta mixture, vegetables, and sauce, finishing with noodles and marinara sauce on top.
- Add Final Cheese Layer: Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top layer.
- Bake Covered: Cover the baking dish with foil and bake in the preheated oven for 25 minutes to cook through and heat evenly.
- Bake Uncovered: Remove the foil and bake for an additional 15 minutes to brown the cheese and create a golden crust.
- Cool and Serve: Allow the lasagna to cool for a few minutes before slicing and serving to help it set and make serving easier.
Notes
- You can substitute the vegetables with your favorites such as eggplant or kale for variety.
- For a gluten-free version, use gluten-free lasagna noodles.
- Letting the lasagna rest after baking helps the layers set and slices hold better.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
