Description

These Melting Sweet Potatoes are a heavenly side dish that combines the natural sweetness of sweet potatoes with savory flavors and a tender, melt-in-your-mouth texture. Roasted to perfection and glazed with a flavorful broth, these sweet potatoes are sure to become a favorite at your table.

Ingredients

Scale

Sweet Potatoes:

  • 2 large sweet potatoes, peeled and cut into 1-inch thick rounds

Other Ingredients:

  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 cup chicken or vegetable broth
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare Sweet Potatoes: In a large bowl, toss the sweet potato rounds with melted butter, olive oil, minced garlic, salt, and black pepper until well coated.
  3. Roast Sweet Potatoes: Arrange the sweet potatoes on the baking sheet in a single layer. Roast for 15 minutes, then flip the rounds over and roast for another 15 minutes.
  4. Add Broth and Thyme: Pour the broth over the sweet potatoes and sprinkle with fresh thyme. Return to the oven and roast for an additional 10 minutes, or until the sweet potatoes are tender and the broth has mostly evaporated, leaving a flavorful glaze.
  5. Serve: Serve warm with extra thyme if desired.

Notes

  • For extra flavor, add a drizzle of honey or a sprinkle of smoked paprika before roasting.
