Description

For the Meat Mixture:

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 (15-ounce) can corn, drained
  • 1 (10-ounce) can Rotel (diced tomatoes with green chilies)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese

For the Cornbread Topping:

  • 1 box Jiffy corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1/2 cup sour cream


Instructions

  1. Preheat the oven: to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook the meat: In a skillet, brown the ground beef and onion. Add corn, Rotel, black beans, and taco seasoning. Simmer, then stir in cheese.
  3. Prepare the topping: In a bowl, mix corn muffin mix, egg, milk, and sour cream. Spread over meat mixture.
  4. Bake: for 25–30 minutes until cornbread is cooked. Add extra cheese in the last 5 minutes.
  5. Cool: Let cool for 5 minutes before serving.
