Ground Beef Mixture:
- 1 lb ground beef or ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies, undrained
Layering:
- 1 (15 oz) can enchilada sauce, red or green
- 2 cups shredded Mexican blend cheese
- 10 small flour or corn tortillas
Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C). Cook the ground meat in a large skillet until browned. Add onion and garlic, cook until softened.
- Mix and Simmer: Stir in taco seasoning, black beans, corn, and diced tomatoes. Simmer for 5 minutes.
- Layering: Grease a 9×13-inch baking dish, spread enchilada sauce on the bottom. Layer tortillas, meat mixture, sauce, and cheese. Repeat layers, ending with tortillas on top.
- Bake: Pour remaining sauce over the top layer, sprinkle with cheese. Bake covered for 25 minutes, then uncovered for 10 minutes until golden.
- Rest and Serve: Let the lasagna rest for 10 minutes before slicing and serving.
Notes
- Feel free to add cooked bell peppers or refried beans for extra flavor.
- This dish can be prepared ahead and refrigerated overnight before baking.
