  • 8 small flour tortillas

  • 1 cup enchilada sauce or taco sauce
  • ½ cup diced tomatoes
  • ¼ cup sliced black olives
  • 2 green onions, sliced

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Cook the Beef: In a skillet over medium heat, cook the ground beef until browned, about 6–8 minutes. Drain excess fat, then stir in taco seasoning and water. Simmer for 5 minutes until thickened.
  3. Prepare the Beans: Warm the refried beans in a saucepan or microwave until spreadable.
  4. Crisp the Tortillas: Lightly fry each tortilla in a skillet with a bit of oil until crisp and golden, or bake them on a sheet pan for 5–7 minutes per side.
  5. Assemble the Pizza: Spread a thin layer of refried beans on one crisp tortilla, then top with seasoned beef. Place a second tortilla on top and spread with 2–3 tablespoons of enchilada or taco sauce. Sprinkle with cheese, diced tomatoes, olives, and green onions.
  6. Bake: Place assembled pizzas on a baking sheet and bake for 8–10 minutes, or until the cheese is melted and bubbly.
  7. Serve: Slice into quarters and serve hot.
