Beef Mixture

Instructions
- Preheat and Crisp Tortillas: Preheat your oven to 375°F. Lightly spray two baking sheets with non-stick spray and place 3 tortillas on each. Bake for 3 to 5 minutes, then carefully flip the tortillas while still in the oven to avoid burns, and bake for an additional 2 to 5 minutes until they develop a slight golden color and crisp texture. Remove them from the oven and set aside.
- Cook Ground Beef: While the tortillas bake, heat a large skillet over medium-high heat. Add the ground beef, cooking and crumbling it until browned. Drain any grease from the skillet. Stir in the taco seasoning and water, bringing the mixture to a boil. Lower the heat to medium-low and simmer for 10 minutes, stirring occasionally. Once cooked, remove from heat.
- Warm Refried Beans and Assemble Layers: Heat refried beans in a microwave-safe bowl until warm. Spread a thin layer of beans on one tortilla. Spoon a third of the seasoned beef mixture over the beans. Top with a second tortilla, then spread 3 tablespoons of enchilada sauce evenly over it.
