Instructions

  1. Brown the Beef: Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon, about 6 minutes. Drain excess grease if needed.
  2. Sauté Aromatics: Add onion and garlic, cooking for 2 to 3 minutes until softened.
  3. Add Vegetables and Seasonings: Stir in zucchini and bell pepper, cooking until just tender, about 5 minutes. Add diced tomatoes, tomato sauce, corn, chili powder, cumin, smoked paprika, salt, and pepper. Stir well and simmer for 8 to 10 minutes until flavors meld and sauce thickens slightly.
  4. Top with Cheese: Sprinkle cheese over the top, cover the skillet, and cook for 2 minutes until melted.
