Pie Crusts:
- 2 refrigerated pie crusts (or homemade)
Apple Filling:
- 3 medium apples, peeled, cored, and finely diced
- 2 tbsp unsalted butter
- 1/3 cup granulated sugar
- 2 tbsp brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp lemon juice
- 1 tbsp all-purpose flour
Others:
- 1 egg, beaten (for egg wash)
- Coarse sugar for sprinkling (optional)
Instructions
- Preheat oven and prepare muffin tin: Preheat oven to 375°F and lightly grease a muffin tin.
- Prepare crusts: Roll out pie crusts and cut circles to fit muffin cups.
- Make apple filling: Melt butter in a skillet, add apples, sugars, spices, lemon juice, and flour. Cook until thickened.
- Fill crusts: Spoon apple filling into crusts. Add lattice tops if desired.
- Bake: Brush tops with egg wash, sprinkle with sugar, and bake until golden brown.
- Cool and serve: Let cool before serving with whipped cream or ice cream.
Notes
- These mini pies can be served warm with whipped cream or vanilla ice cream.
- Granny Smith apples work best for tartness, but you can use a mix for added flavor.
