  • Optional: ½ cup chopped walnuts or pecans, â…“ cup shredded coconut, ¼ cup raisins

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease.
  2. Mix Wet Ingredients: In a large bowl, combine bananas, carrots, eggs, oil, brown sugar, honey, and vanilla.
  3. Combine Dry Ingredients: In another bowl, mix flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
