  • 1 1/4 cups all-purpose flour
  • 1 cup whole wheat flour
  • 3/4 cup brown sugar (packed)
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon

Additional Ingredients:

  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins
  • 2 cups grated carrots (about 2 medium)
  • 1 apple (peeled and grated)

Wet Ingredients:

  • 3 large eggs
  • 2/3 cup vegetable oil
  • 1/4 cup orange juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease.
  2. Mix Dry Ingredients: In a large bowl, combine all-purpose flour, whole wheat flour, brown sugar, baking soda, cinnamon, and salt. Add coconut, nuts, raisins, carrots, and apple.
  3. Combine Wet Ingredients: In a separate bowl, whisk eggs, oil, orange juice, and vanilla. Pour into the dry ingredients and mix until just combined.
  4. Bake: Fill muffin tin cups 3/4 full with batter. Bake for 20–22 minutes until a toothpick comes out clean.
  5. Cool and Serve: Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
