Dry Ingredients:
- 1 1/4 cups all-purpose flour
- 1 cup whole wheat flour
- 3/4 cup brown sugar (packed)
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon

- 1/2 cup shredded coconut
- 1/2 cup chopped walnuts or pecans
- 1/2 cup raisins
- 2 cups grated carrots (about 2 medium)
- 1 apple (peeled and grated)
Wet Ingredients:
- 3 large eggs
- 2/3 cup vegetable oil
- 1/4 cup orange juice
- 1 teaspoon vanilla extract
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease.
- Mix Dry Ingredients: In a large bowl, combine all-purpose flour, whole wheat flour, brown sugar, baking soda, cinnamon, and salt. Add coconut, nuts, raisins, carrots, and apple.
- Combine Wet Ingredients: In a separate bowl, whisk eggs, oil, orange juice, and vanilla. Pour into the dry ingredients and mix until just combined.
- Bake: Fill muffin tin cups 3/4 full with batter. Bake for 20–22 minutes until a toothpick comes out clean.
- Cool and Serve: Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- These muffins freeze well and can be thawed overnight or reheated in the microwave.
- Try using chopped dates or dried cranberries instead of raisins for a different flavor.
