Brownie Layer:
- 1 box (18–19 oz) brownie mix (plus ingredients listed on the box, usually eggs, oil, and water)
Coconut Layer:
- 2 cups sweetened shredded coconut
- 1 (14 oz) can sweetened condensed milk
- 1 tsp vanilla extract
Ganache Topping:
- 1 cup semisweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish with nonstick spray or parchment paper.
- Prepare and bake the brownie mix according to package instructions.
- Mix together the shredded coconut, sweetened condensed milk, and vanilla extract in a medium bowl until well combined.
- Spread the coconut mixture over the warm brownies once baked.
- Heat the heavy cream until hot but not boiling, then pour over the chocolate chips to create a ganache. Spread the ganache over the coconut layer.
- Cool the brownies at room temperature or chill in the refrigerator until the ganache sets. Slice and serve.
Notes
- For an extra-rich flavor, add a layer of chopped almonds before the ganache to mimic Almond Joy.
