Description

Indulge in the delightful taste of these Muffins That Taste Like Doughnuts. A sweet treat that’s perfect for breakfast or as a snack, these mini muffins are coated in a cinnamon-sugar topping that will remind you of your favorite doughnut.

Ingredients

Scale

Main Batter:

  • 1⁄2 cup granulated sugar
  • 1⁄4 cup unsalted butter, melted
  • 1⁄4 teaspoon ground nutmeg
  • 1⁄2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1⁄4 teaspoon salt

For the topping:

  • 2 tablespoons unsalted butter, melted
  • 1⁄4 cup granulated sugar
  • 1⁄2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease or line a mini muffin tin.
  2. Mix wet ingredients: In a mixing bowl, whisk together the melted butter, sugar, nutmeg, milk, and vanilla extract until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet mixture and stir until just combined—do not overmix.
  4. Bake: Spoon the batter into the muffin tin, filling each cup about two-thirds full. Bake for 12 to 15 minutes, or until the tops are lightly golden and a toothpick comes out clean.
  5. Prepare topping: While the muffins bake, mix the cinnamon and sugar in a small bowl and melt the butter in another.
  6. Coat muffins: Once the muffins are cool enough to handle but still warm, dip the tops in melted butter, then roll or sprinkle them in the cinnamon-sugar mixture.
  7. Serve: Serve warm or at room temperature.

Notes

  • These are best the day they’re made, but they can be stored in an airtight container for up to 2 days.
  • Try adding a pinch of cardamom to the batter for a fun twist.
