- 1 egg (for egg wash)

- 1 tablespoon of milk (for melting chocolate)

Instructions
- Prepare Cheesecake Mixture: In a mixing bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and sour cream. Beat the mixture until it becomes smooth and creamy, ensuring there are no lumps.
- Prepare Puff Pastry: Lightly dust your work surface with flour and roll out the thawed puff pastry sheets to about 1/8 inch thickness. Using a knife or pastry cutter, cut the pastry into 3×3 inch squares.
- Assemble Mummy Bites: Place a small spoonful of the cheesecake mixture in the center of each pastry square. Cut thin strips of puff pastry and wrap these strips around the cheesecake filling in a crisscross mummy pattern, leaving a small opening for the eyes.
- Egg Wash and Bake: Preheat your oven to 400°F (200°C). Place the wrapped bites on a baking sheet lined with parchment paper. Brush each bite with beaten egg to give a glossy golden finish. Bake the bites in the oven for 15-20 minutes, or until the puff pastry is puffed and golden brown.
- Decorate with Eyes: Allow the bites to cool completely. Melt the chocolate chips together with the tablespoon of milk gently, either in a microwave in short bursts or over a double boiler.
