- 1 cup medjool dates (pitted)
- 1 cup walnuts
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 2 tablespoons mini chocolate chips (optional)
- Cocoa powder or shredded coconut for rolling (optional)
Instructions
- In a food processor, pulse the walnuts until finely ground. Add the dates, cocoa powder, vanilla extract, and salt. Process until the mixture is sticky and forms a dough-like consistency.
- If using, pulse in the chocolate chips just until combined. Scoop out tablespoon-sized portions and roll into balls using your hands.
- If desired, roll the bites in cocoa powder or shredded coconut for extra flavor and texture. Place the bites on a parchment-lined plate or tray and refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge for up to 1 week.
Notes
- You can substitute almonds or cashews for the walnuts.
- For a sweeter version, add 1–2 teaspoons of maple syrup or honey.
