Description

  • 2 cups shredded sweetened coconut
  • 1/2 cup old-fashioned oats
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil

  • 1/2 teaspoon vanilla extract

Instructions

  1. In a medium saucepan over low heat, combine the peanut butter, honey (or maple syrup), and coconut oil. Stir until melted and smooth.
  2. Remove from heat and stir in the vanilla extract and salt.
  3. Add the shredded coconut and oats, mixing until fully coated.
  4. Let the mixture cool for 5 minutes, then scoop tablespoon-sized portions onto a parchment-lined baking sheet.
  5. Flatten slightly with the back of a spoon if desired.
  6. Refrigerate for at least 30 minutes or until set.
  7. Store in an airtight container in the refrigerator for up to 1 week.
