- 1/2 cup old-fashioned oats
- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil

Instructions
- In a medium saucepan over low heat, combine the peanut butter, honey (or maple syrup), and coconut oil. Stir until melted and smooth.
- Remove from heat and stir in the vanilla extract and salt.
- Add the shredded coconut and oats, mixing until fully coated.
- Let the mixture cool for 5 minutes, then scoop tablespoon-sized portions onto a parchment-lined baking sheet.
- Flatten slightly with the back of a spoon if desired.
- Refrigerate for at least 30 minutes or until set.
- Store in an airtight container in the refrigerator for up to 1 week.
Notes
- For a chocolate twist, stir in 1/4 cup mini chocolate chips after the mixture has cooled slightly.
- Use unsweetened coconut for a less sweet version.
