- 1/2 cup sweetened condensed milk
- 1/2 teaspoon vanilla extract
- 1 tablespoon coconut oil (optional, for smoother texture)
For Coating and Rolling:
- 1 cup white chocolate chips or melting wafers
- Extra shredded coconut for rolling (optional)
Instructions
- Prepare the Coconut Mixture: In a medium bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and coconut oil. Mix until a thick, sticky dough forms. Chill in the refrigerator for 20–30 minutes.
- Shape the Balls: Scoop out heaping teaspoons of the mixture and roll into 1-inch balls. Place on a parchment-lined tray and freeze for 15–20 minutes.
- Coat with White Chocolate: Melt the white chocolate in the microwave, then dip each coconut ball into the chocolate. Place back on parchment paper and optionally roll in extra shredded coconut. Chill until firm.
