For the cookie dough:

- ½ cup brown sugar
- ¼ cup granulated sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1¼ cups all-purpose flour (heat-treated)
- ½ cup mini chocolate chips
For the cheesecake layer:
- 16 ounces cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, whipped to stiff peaks
Optional topping: additional mini chocolate chips or cookie dough crumbles
Instructions
- Prepare the crust: Line an 8×8-inch pan with parchment paper. Mix graham cracker crumbs, melted butter, and brown sugar in a bowl. Press into the pan.
- Make the cookie dough: Cream butter and sugars, add milk, vanilla, flour, and chocolate chips. Set aside.
- Prepare the cheesecake layer: Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream.
- Assemble: Spread half the cheesecake mixture over the crust. Crumble cookie dough on top. Add remaining cheesecake mixture. Chill for 4 hours.
- Serve: Slice into bars and enjoy!
