Description

Ingredients
Scale
Ingredients:
- 1/2 cup unsalted butter
- 2 cups granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- pinch of salt
Instructions
- In a medium saucepan over medium heat, combine the butter, sugar, milk, and cocoa powder. Stir constantly until the mixture comes to a full rolling boil.
- Boil for 1 minute, then remove from heat.
- Quickly stir in the peanut butter, vanilla extract, and salt until smooth.
- Add the oats and stir until fully coated.
- Drop the mixture by spoonfuls onto parchment or wax paper and let cool at room temperature until set, about 30 minutes.
Notes
Notes:
- Boil the mixture for exactly 1 minute—too little and the cookies won’t set; too much and they’ll turn dry and crumbly.
- For a twist, add shredded coconut, chopped nuts, or a dash of cinnamon.
