Ingredients
Scale
Cheesecake Balls:
- 8 ounces cream cheese, softened
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs (plus extra for rolling)
Chocolate Coating:
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- Prepare Cheesecake Mixture: In a large mixing bowl, beat the cream cheese and peanut butter until smooth. Add powdered sugar, vanilla extract, and graham cracker crumbs. Mix until fully combined.
- Form Balls: Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Freeze for 20–30 minutes until firm.
- Coat in Chocolate: In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals. Dip the chilled balls into the melted chocolate, allowing excess to drip off. Place back on the sheet.
- Chill and Serve: Optionally, roll in extra graham cracker crumbs or toppings. Refrigerate for at least 15 minutes until the chocolate sets.
Notes
- For added crunch, mix in crushed pretzels or nuts before shaping the balls.
- Store in an airtight container in the fridge for up to 1 week or freeze for longer freshness.
