Description

Delicious and easy No-Bake Peanut Butter Oat Bars combining creamy peanut butter, honey, and oats topped with a smooth chocolate layer. Perfect for a quick snack or a sweet treat without heating up your kitchen.

Ingredients

Scale

Base

  • 3 cups peanut butter
  • 1 cup honey
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 4 cups oats

Topping

  • 2 cups semi-sweet chocolate chips
  • 2 ½ tbsp unsalted butter

Instructions

  1. Prep Pan: Line a 9×13-inch pan with parchment paper, leaving an overhang on the sides for easy removal later.
  2. Heat Peanut Butter & Honey: In a medium saucepan over medium-low heat, gently melt the peanut butter, honey, and salt together, stirring carefully for about 2 minutes until fully combined and smooth.
  3. Add Vanilla & Oats: Remove from heat and stir in the vanilla extract. Then fold in the oats thoroughly until the mixture is evenly combined.
  4. Transfer to Pan: Pour and spread the oat mixture evenly into the prepared pan, being careful not to press down too hard to keep the texture light.
  5. Melt Chocolate: In a microwave-safe bowl or over a double boiler, melt the chocolate chips together with the unsalted butter until smooth and glossy.
  6. Top Bars: Pour and spread the melted chocolate evenly over the oat layer to create a smooth chocolate topping.
  7. Chill: Place the pan in the refrigerator for at least 2 hours to allow the bars to set completely.
  8. Slice & Serve: Use the parchment paper overhang to lift the bars out of the pan, then cut into squares or rectangles to serve.

Notes

  • Use natural or creamy peanut butter for the best texture.
  • The bars can be stored in an airtight container in the refrigerator for up to a week.
  • For a nut-free option, substitute peanut butter with sunflower seed butter.
  • If preferred, you can add chopped nuts or dried fruit to the oat mixture for extra texture.
  • Microwaving the chocolate should be done in short intervals, stirring in between to avoid burning.
