- 3 cups peanut butter
- 1 cup honey
- ½ tsp salt
- 1 tsp vanilla extract
- 4 cups oats
Topping
- 2 cups semi-sweet chocolate chips
- 2 ½ tbsp unsalted butter
Instructions
- Prep Pan: Line a 9×13-inch pan with parchment paper, leaving an overhang on the sides for easy removal later.
- Heat Peanut Butter & Honey: In a medium saucepan over medium-low heat, gently melt the peanut butter, honey, and salt together, stirring carefully for about 2 minutes until fully combined and smooth.
- Add Vanilla & Oats: Remove from heat and stir in the vanilla extract. Then fold in the oats thoroughly until the mixture is evenly combined.
- Transfer to Pan: Pour and spread the oat mixture evenly into the prepared pan, being careful not to press down too hard to keep the texture light.
- Melt Chocolate: In a microwave-safe bowl or over a double boiler, melt the chocolate chips together with the unsalted butter until smooth and glossy.
- Top Bars: Pour and spread the melted chocolate evenly over the oat layer to create a smooth chocolate topping.
- Chill: Place the pan in the refrigerator for at least 2 hours to allow the bars to set completely.
- Slice & Serve: Use the parchment paper overhang to lift the bars out of the pan, then cut into squares or rectangles to serve.
Notes
- Use natural or creamy peanut butter for the best texture.
- The bars can be stored in an airtight container in the refrigerator for up to a week.
- For a nut-free option, substitute peanut butter with sunflower seed butter.
- If preferred, you can add chopped nuts or dried fruit to the oat mixture for extra texture.
- Microwaving the chocolate should be done in short intervals, stirring in between to avoid burning.
