- 1 pound small cooked Nordic shrimp (or baby shrimp)
- 1/3 cup mayonnaise
- 2 tablespoons sour cream or crème fraîche
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh chives, chopped
- 1/4 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 small cucumber, diced (optional)
- Lettuce leaves or rye bread for serving
Instructions
- In a large bowl, whisk together mayonnaise, sour cream, lemon juice, lemon zest, dill, chives, Dijon mustard, salt, and black pepper until smooth.
- Gently fold in the shrimp and cucumber (if using) until evenly coated.
- Cover and refrigerate for at least 30 minutes to let the flavors meld.
- Serve chilled on crisp lettuce leaves, piled on rye bread, or as an open-faced sandwich.
Notes
- For a lighter version, replace half of the mayonnaise with Greek yogurt.
- Traditional Nordic shrimp salad is often served on dark rye bread with a lemon wedge and extra dill.
