Cookie Dough:

- 1/4 cup chopped dark chocolate or chocolate chunks
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream the butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add wet ingredients: Beat in the egg and vanilla.
- Mix dry ingredients: In another bowl, whisk flour, protein powder, baking soda, and salt.
- Combine wet and dry ingredients: Gradually add the dry mixture into the wet ingredients until combined.
- Add mix-ins: Stir in pistachios, white chocolate chips, and dark chocolate chunks.
- Form and chill dough: Scoop out large portions of dough and place on the baking sheet. Chill in the refrigerator for 15–20 minutes.
- Bake: Bake for 12–15 minutes until golden. Let cool before transferring to a wire rack.
