Description

These Oatmeal Raisin Cookie Bars are a delightful treat that combines the flavors of a classic oatmeal raisin cookie in an easy-to-make bar form. Chewy, sweet, and satisfying, these bars are perfect for a quick dessert or snack.

Ingredients

Scale

Cookie Bars:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease or line a 9×13-inch baking pan with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla: Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in oats and raisins: Fold in the oats and raisins until evenly distributed.
  6. Bake: Spread the batter evenly into the prepared pan. Bake for 25 to 30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Cool and cut: Allow to cool completely in the pan before cutting into bars.

Notes

  • You can substitute raisins with dried cranberries or chopped dates.
  • For a nuttier flavor, add 1/2 cup chopped walnuts or pecans.
