Cookie Bars:

- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease or line a 9×13-inch baking pan with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs and vanilla: Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fold in oats and raisins: Fold in the oats and raisins until evenly distributed.
- Bake: Spread the batter evenly into the prepared pan. Bake for 25 to 30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Cool and cut: Allow to cool completely in the pan before cutting into bars.
